Candied Sweet Potatoes With Apples

I have promised to post this recipe every year since I started blogging. The recipe that I derived this from uses yams but I prefer to use sweet potatoes which have the nice effect of throwing people off a little since most people think that yams are sweet potatoes.
You’ll need
- 2 to 2 1/2 pounds of sweet potatoes
- 1/4 cup firmly packed brown sugar
- 1 Granny Smith apple, peeled and thinly sliced
- 3/4 cup apple cider
- 2 Tbsp stick margarine, cut into pea-sized pieces
- 2 Tbsp chopped pecans
Steps 1 and 2 can be done the night before the feast.
- Preheat the oven to 350 degrees Fahrenheit.
- Place the sweet potatoes on a baking sheet and bake until the skin feels soft to the touch, about 60 minutes.
- Cool, peel, and slice the sweet potatoes into 1/8 to 1/4 inch thick rounds.
- In a small bowl, whisk the sugar and cinnamon.
- Spray an 8×8-inch baking dish w nonstick cooking spray or grease it with margarine.
- Place half of the yams, then the apple slices, then half of the sugar mixtures.
- Top with the remaining yams and sugar mixture plus the pecans.
- Pour the cider around the edges of the baking dish.
- Evenly scatter the margarine pieces on top.
- Bake covered, until bubbly and the sweet potatoes are tender, about 40 minutes.
